Simple Cooking - Redneck Stirfry

Heat 1 drained can each of black eyed peas, lima beans, stewed tomatoes, and sweet corn in a large pot. Cook meat of your choice in a skillet (seasoned with Tony's for a little spice, plus whatever else you like). Serve meat and veggies over rice. Add to it as much as your resources allow! Onion, bacon, served with cornbread.... It's up to you! I made up this simplified version after falling in love with the original redneck stir-fry at a local restaurant. It's easy, tasty, colorful, and enough for a family of 4 or 5.

Submitted by Ansley Carter of Appling. If you have a quick and easy recipe to share, please send it to john@wafj.com. You'll get a thank-you gift if we use your recipe.
