Simple Cooking - Cajun Chicken Pasta


3 – 4 boneless skinless chicken breast cut into bite sized cubes
1 jar of Prego or Ragu spaghetti sauce (red sauce) or homemade
1 jar of alfredo sauce (white sauce) or homemade
Cajun seasoning
1 box bow tie noodles
Parmesan Cheese for topping (fresh or bottled)
Texas Toast or Bread Optional

Cut chicken into bite size cubes and coat with non-stick spray or little canola oil, sprinkle with Cajun seasoning (to tastes) and cooking deep skillet on medium heat until done. Meanwhile, cook the bow tie noodles according to the directions on the box. Once the chicken is thoroughly cooked add both the red sauce and white sauce to the chicken, stir to combine and cook on low for 15 to 20 minutes. Drain the noodles and add the chicken and sauce and combine. Serve immediately and add Parmesan cheese on top of the Cajun chicken pasta once plated and enjoy. Total cooking time approximately 30 minutes.

Note: Depending on the Cajun seasoning you use it can be hotto the taste. Be careful and add a little at a time until you have it at the right heat for your taste. All Cajun seasonings are not a like and adding too much can make the dish too hot for some people. I've used both the bottled sauces and homemade sauces, both taste great and the bottled makes the cooking time shorter for quick easy meal.
