Saturday is National Coffee Day, which means free coffee at many area restaurants and coffee shops. Kangaroo Express -- Free Bean Street Coffee for just a penny between 8am and noon on Saturday. Krispy Kreme -- Free 12-ounce cup of the new house blend on Saturday. McDonald's -- Free small cup of coffee everyday this week.

Simple Cooking - Spaghetti Pie


3.5 - 4 cups cooked spaghetti noodles of your choice
2 tablespoons butter, melted
2 eggs, beaten
1/3 cups grated parmesan
1 cups cottage cheese (low fat if desired)
2 - 2.5 cups spaghetti sauce of your choice
1 cup mozzarella, shredded (low moisture part skim is what I use)

I use approx 8x8 pan; 8 or 9 inch round would also work well. Grease pan, heat oven to 350. Mix noodles, butter, eggs & parmesan and press into bottom and part-way up sides of pan to form shallow well. Fill in well with cottage cheese. Top with sauce. Top with mozzarella. Bake at 350 for 25-30 minutes.
