Simple Cooking - Peach Salad


2 small packages of Peach Jello
1 large can of crushed pineapple
1 regular size tub of Cool Whip
2 cups of buttermilk

Heat Jello and pineapple in saucepan (about 5 minutes). Cool it. Add cool whip and buttermilk. Refrigerate several hours or overnight.

Simple Cooking - Egg Muffins


1 muffin pan
Non-stick cooking spray
Eggs (each egg makes 1 muffin)
Real bacon pieces
Sharp cheddar cheese finely grated

Preheat your oven to 375 degrees. Spray your muffin pan with the non stick cooking spray. Break eggs directly into the muffin pan, 1 egg per muffin slot. Use a whisk or fork to break up the egg yolk and mix up the egg. Add a pinch of bacon pieces, followed by a pinch of sharp cheddar cheese. Repeat this step as desired. Bake for 14 minutes on 375 degrees. Allow to cool, and enjoy.

The FTC launched a new tool that tries to make it easier for consumers to recover from identity theft. IdentityTheft.gov provides an interactive checklist, sample letters and other materials that are intended to simplify the recovery process and help victims to understand which recovery steps should be taken as soon as they are alerted that their identity has been stolen.

Simple Cooking - Easy Chicken Enchilada Crescent Bake


1 1/2 cups shredded cooked chicken, cooled
1 can (10 oz) Old El Paso mild red enchilada sauce
1 can (8 oz) Pillsbury refrigerated crescent dinner rolls
1 1/4 cups shredded Mexican cheese blend (5 oz)

1. Heat oven to 375 degrees. Grease 13x9 inch (3 quart) glass baking dish with shortening or cooking spray. In medium bowl, mix chicken and 1/2 cup of the enchilada sauce.

2. Separate or cut dough into 4 rectangles. Press the perforations to seal. Spoon chicken mixture and 1 tablespoon of the cheese onto 1 long side of each rectangle. Roll up.

3. Place seam side down in baking dish about 1 inch apart.

4. Bake 20 minutes. Carefully remove dish from oven. Sprinkle with remaining cheese and return to oven. Bake 2 to 4 minutes longer or until cheese melts.

5. Meanwhile, microwave remaining sauce in microwavable glass measuring cup uncovered on High in 30-second intervals until hot. Drizzle over enchiladas.

Simple Cooking - Blueberry Crunch


3 cups frozen blueberries (you can use fresh too)
1 20 oz can crushed pineapple
1 box yellow butter cake mix
1 stick of butter
1 cup sugar, divided

In a 9x13 pour can of pineapple, juice and all, spread over pan. Add blueberries over the pineapple (do not stir). Sprinkle 3\4 cup of sugar over that. Then spread dry cake mix over the fruit. Melt the butter and pour over cake mix. Sprinkle 1/4 cup sugar on top and bake at 350 for 30 to 45 minutes! Serve with ice cream!

Simple Cooking - Crispy Chicken


1 egg
1 package uncooked chicken cut into strips
1/2 cup bread crumbs
1/2 cup grated Parmesan cheese
1 tsp ranch season powder
Butter

Preheat oven to 350 degrees. Mix bread crumbs and grated cheese. Add ranch seasoning. Set aside. Scramble up egg in separate bowl. Dip chicken in egg and then the dry mixture. Place chicken in a 13x9 baking dish that has been sprayed with non-stick spray. Place a pat of butter on each piece of chicken, and bake for 20-30 minutes.

Simple Cooking - Crescent Chicken


1 (8 or 6 jumbo count) package refrigerator crescent rolls
2 cups chopped cooked chicken
1 cup shredded cheddar cheese
1 can cream of chicken soup
1 can of milk (using soup can)

Preheat oven to 350. Mix the soup and milk and heat on the stovetop. Separate crescent rolls. Spoon chicken and cheese onto each crescent; roll and seal to enclose filling. Place in a 9×13 baking dish. Pour soup over rolls. Bake at 350 uncovered for 30 mins.

Simple Cooking - Cheesy Chicken and Rice Casserole


1 can (10 1/2 ounces) Campbell’s® Condensed Cream of Chicken Soup or (10 1/2 ounces) Campbell’s® Condensed Cream of Chicken Soup or (10 1/2 ounces) Campbell’s® Condensed 98% Fat Free Cream of Chicken Soup
1 1/3 cups water
3/4 cup uncooked long grain white rice
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 cups frozen mixed vegetables (carrots, green beans, corn, peas)
1 1/4 pounds skinless, boneless chicken breast halves
1/2 cup shredded Cheddar cheese (about 2 ounces)

Heat the oven to 375°F. Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8 x 2-inch baking dish. Top the rice mixture with the chicken. Cover the baking dish. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.

Simple Cooking - Caramel Apple Cake


1 spice cake mix
1 can apple pie filling, run knife through can to make apple slice small (Caramel, if you can find it)
3 Eggs
1/3 Cup Oil

Mix well, bake at 350 for 40 minutes. Immediately top with 1/2 can caramel frosting. Serve warm with whipped cream.

Simple Cooking - Texas Corn Casserole


6 Tbsps butter, melted
1 can whole kernel corn (don't drain)
1 can cream corn
1 (7 oz) pkg Martha White Sweet Yellow Cornbread & Muffin Mix
6 green onions (white and green parts), finely chopped
2 large eggs
1/2 green pepper, seeded and diced
1 1/2 tsps Creole seasoning (less for less spicy) plus more to sprinkle on top

Preheat oven to 400 degrees. In a large bowl, combine all ingredients. Pour into greased 9x13 pan (glass preferred). Sprinkle with Creole seasoning. Bake about 45 minutes until brown and set.

Simple Cooking - Easy Cheesy Potatoes


1 lb. russet potatoes (about 4 medium), cut into 1/2-inch chunks
1/2 lb. (8 oz.) Velveeta pasteurized prepared cheese product, cut up
1/2 cup chopped onions
1/4 cup mayonnaise
4 slices bacon, cooked, drained and crumbled (about 1/4 cup)

Heat oven to 375 degrees. Combine all ingredients except bacon in 8-inch square baking dish sprayed with cooking spray; cover with foil. Bake for 45 minutes. Top with bacon; bake, uncovered, 5 to 10 minutes or until potatoes are tender.

Simple Cooking - Cheesy Skillet Lasagna


1 pound ground beef
2 garlic cloves, minced
1 can diced tomatoes with basil, oregano and garlic, undrained
2 jars (14 oz. each) spaghetti sauce
1 can cream of onion soup, undiluted
2 eggs, lightly beaten
1 1/2 cups cottage cheese
3/4 teaspoon Italian seasoning
1 box no-bake-lasagna noodles
1/2 cup shredded Colby Jack cheese
1 cup shredded mozzarella cheese

In a large skillet, brown ground beef with garlic and drain when no longer pink. Add tomatoes and sauce, and heat through. Set aside the ground beef mixture in a large bowl. In a bowl, mix together the eggs, soup, cottage cheese, and Italian seasoning. Spread a cup of the meat mixture evenly to bottom of the skillet. Layer with a cup of cottage cheese mixture and noodles (break the noodles to fit). Repeat layers and top with remaining sauce. Bring to a boil, reduce heat, then cover and simmer for about 20 minutes or until the noodles are tender. Remove from heat and sprinkle with shredded cheeses. Cover for a couple of minutes to allow cheese to melt.

Simple Cooking - Strawberry Brownies


1 box strawberry cake mix (I use Duncan Hines)

2 eggs 

1/3 cup oil 

1 cup powdered sugar
½ -2 TB water or milk

Preheat oven to 350 degrees. Line 8" square baking pan with parchment (and spray with Pam). Mix strawberry cake mix, eggs, and oil with hand mixer until well combined. Spread batter evenly into pan. Bake for 15 minutes or until just set; be careful not to overcook. Allow brownies to cool for 10 minutes; lift carefully from pan using ends of parchment to lift. Mix powdered sugar and water until smooth. Pour glaze over brownies, spreading to edges so that glaze will drip down sides. Allow brownies to cool and glaze to set before cutting into squares.

Cleve as Frederick Douglass


Cleve portrayed abolitionist Frederick Douglass as part of a history program last night at Nancy Carson Library in North Augusta. He really looks the part!


Simple Cooking - Stuffed French Bread


1 pound lean ground beef
1/2 cup diced celery
1 teaspoon minced garlic
 2-3 tablespoons diced onion
2 teaspoons Worcestershire sauce
2 tablespoons milk
1 can cream of mushroom soup (I used cream of chicken)
Salt and pepper to taste
1 1/2 cups shredded cheese (I used sharp)
1 loaf french bread

Preheat oven to 350 degrees Fahrenheit, slice french bread in half lengthwise and scoop out bread - chop and dice bread scoopings in a large bowl. In a large pan add the ground beef and onion and brown ground beef until done, drain any excess grease and return to pan, add celery and garlic and cook until celery is tender. Then add the soup, Worcestershire sauce, milk, salt and pepper, and cook until fully incorporated (took me 2 minutes). Add that to your bread bowl and fold in with the bread, this is where I like to add some of the cheese to this mixture. In one half of the French bread spoon meat filling and top with remaining cheese, place other half on top and bake in oven 10- 15 minutes or until cheese is melted...optional during the last 5 minutes, I brushed mine with melted garlic herb butter. Remove from oven and let sit 5 minutes before slicing into sandwich size pieces. Great alone or accompanied with a side salad.

Another good variation is by using deli roast beef - browned with the onions, and instead of celery, adding sautéed diced bell pepper to the mixture and using provolone cheese to make it a Philly cheese steak stuffed French bread.

Simple Cooking - Potato Chip Alternatives


Spinach Chips

2 handfuls of spinach
1 tbsp olive oil
Salt
Seasoning of your choice (garlic herb suggested)

Mix ingredients in a bowl. Arrange spinach leaves on tray in single layer. Bake on 350 degrees for 10 minutes. They will be crisp and ready to eat immediately.


Zucchini Chips

Sliced zucchini
Salt
Pepper
Splash of olive oil
1 tbsp Parmesan cheese

Mix ingredients in a bowl. Place zucchini slices on a tray and and bake at 230 degrees for 1 hour.

Simple Cooking - David's Chili


1 pound ground venison or beef
1 can of diced tomatoes (14oz)
1 cup of salsa
1 can of black beans (14 oz)
1 sweet yellow onion chopped
1 green bell pepper chopped
2 teaspoons chili powder
2 teaspoons ground cumin
3/4 teaspoon salt
1 jalapeño pepper chopped, if you like it spicy.

Brown meat do not drain. Drain black beans. Add beans, onion, and bell pepper (and jalapeño if you want it) to the skillet with the meat. Stir fry until mixed well. Pour mixture into crock pot. Add the rest of the ingredients (salsa, diced tomatoes, chili powder, cumin, salt). Cook on low for 8 hours or high for 4 hours. (the longer it cooks the better). Stir periodically. Serve with sharp cheddar cheese, Ritz crackers and sour cream.

 **What is great about this is you can vary ingredients to taste. There are tons of different types of salsa, diced tomatoes, and even beans you can use to tweak the flavor/texture. This recipe is plenty for a family of four, and its easy to double as long as your crock pot is big enough.
