Simple Cooking - Meatball Sandwich Casserole


1 bag of frozen meatballs (I use Mama Lucia Brand, personal preference)
1 jar of marinara sauce or spaghetti sauce if there isn't any marinara on hand
1 cup mozzarella cheese, shredded
1 cup Italian blend cheese, shredded
1/2 cup Parmesan cheese, shredded
1 loaf of fresh Italian bread, sliced

Preheat oven to 400. Place entire bag of meatballs in pot with sauce (I also add garlic, onion powder, salt and pepper to taste) and cook over medium heat until warmed completely through, about 10 minutes. Stir as needed to keep meatballs from sticking to pot. Once heated through remove from heat. Place meatballs in the center of a 9x13 baking dish, layer mozzarella and Italian blend cheeses over meatballs topping off with the Parmesan. Take the slices of Italian bread and line the pan all the way around with them so that they are kind of keeping the meatballs toward the center of the pan. The bread slices will be standing up in the pan as shown in the picture. You have creative freedom here with the bread...you can lightly butter and garlic the bread prior to placing it in the pan if you prefer or even brush lightly with olive oil and garlic. Place in oven and bake for approximately 25 minutes or until cheese is melted and bubbly. Remove from oven, serve and enjoy!

Simple Cooking - Watergate Salad


8 oz cool whip
Small box of pistachio pudding mix
Small can crushed pineapple with juice
Handful chopped pecans
1 cup mini marshmallows

Put cool whip, pudding mix, crushed pineapples with juice in bowl and mix. Mix in remaining ingredients. Serve cold.

Simple Cooking - Hot Apple Pie Dip


8 oz. cream cheese spread
2 Tbsp. brown sugar
1/2 tsp. pumpkin pie spice (or ground cinnamon)
1 apple, chopped, divided
1/4 cup shredded cheddar cheese
1 Tbsp. finely chopped pecans
1 box of thin wheat crackers

Heat oven to 375 degrees. Mix cream cheese, sugar and spice in medium bowl until well blended. Stir in half the apples. Spread into pie plate or small casserole dish; top with remaining apples, cheddar and nuts. Bake 10 to 12 minutes or until heated through. Serve with thin wheat crackers.

Simple Cooking - Oreo Balls


1 Package of Oreos
1 Rectangular package of Cream Cheese
1 Package of white chocolate bars from the baking aisle

Crush Oreos up really fine in a zip lock bag. Mix with 1 package of softened cream cheese (to room temp). Refrigerate balls for about an hour. Melt white chocolate on stove and dip Oreo balls in chocolate! Cool/refrigerate.

Simple Cooking - Turkey Salsa Soup


1 cup chunky salsa with chipotle
1 can (15 oz) black beans, rinsed, drained
1 cup frozen whole kernel corn
1 cup chopped cooked turkey
1 can (14.5 oz) chicken broth

Combine salsa, black beans, corn, turkey and broth in large saucepan. Bring to boil on medium-high heat. Reduce heat. Simmer, uncovered, 5 minutes.

Simple Cooking - Apple Pie Crescent Bites


1 red, tart juicy apple, washed and sliced into 8 slices (skin left on)
4 tablespoons brown sugar
3 teaspoons cinnamon
1 tablespoon melted butter
1 can refrigerated crescent rolls

Preheat the oven to 350 degrees. Roll out the crescent rolls on a greased baking sheet. Brush with melted butter, then sprinkle with brown sugar and cinnamon. Place an apple slice at the wide end of the crescent roll, and roll up the apple inside the crescent. Repeat until all the rolls are rolled up, then brush more butter on top and sprinkle them lightly with cinnamon. Bake for 15 minutes until golden brown.

Simple Cooking - Cinnamon Cream Cheese Rollups


1 loaf white bread crust removed and each slice rolled with rolling pin (except ends)
1 8oz pckg cream cheese softened
1 egg yolk
1/4 cup sugar
1 stick butter
1 tbsp cinnamon

Preheat oven to 350. Mix cream cheese, egg yolk, and sugar. Spread mixture over each slice and roll diagonally. Melt a stick of butter and dip each roll. Mix 1 cup sugar and 1 tbsp cinnamon. Dip each buttered roll in cinnamon sugar. Bake for 19 min.

Simple Cooking - Crockpot Salsa Chicken


3-4 boneless skinless chicken breasts
1 can cream of chicken soup (can use regular or the Healthy Request)
1 cup salsa
1 package taco seasoning
1 cup sour cream
Shredded cheddar cheese (optional)

Combine cream of chicken soup, salsa, and taco seasoning in crockpot. Add chicken breasts. Cover and cook on low for 6 hours. Shred apart chicken. Stir in sour cream. Serve over rice or make chicken soft tacos. Add the shredded cheese on top!

Simple Cooking - Pumpkin Pie Muffins


18 ounces spice cake mix
15 ounces pumpkin (not pumpkin pie mix)

Simply mix the pumpkin and the spice cake mix together with electric mixer until well combined. (At this point you may also want to throw in some nuts or raisins, if you like.). Spoon into paper lined small muffin/cupcake tins, 2/3 full. (The batter is very thick and doesn't "settle", so you may wish to smooth the tops if you care what the finished product looks like!). Bake at 350 degrees for 18-22 minutes or until a knife comes out clean.

Simple Cooking - Spinach Lasagna


FILLING

10 oz. pkg. frozen chopped spinach thawed and squeezed dry
16 oz. container of cottage cheese
15 oz. container of ricotta cheese
1 ½ cups of shredded mozzarella cheese
3 teaspoons Italian seasoning
Salt and pepper to taste (about a teaspoon each)

REMAINING INGREDIENTS

Box of Barilla no-boil lasagna noodles
1 jar of favorite marinara sauce
½ cup mozzarella cheese
¼ cup parmesan cheese

Directions: Preheat oven to 375 degrees In a bowl, mix together the filling ingredients and set aside. In a 9x13 pan spoon some marinara sauce on the bottom of the pan and place lasagna noodles side by side (careful to not overlap), spoon the spinach mixture on top of the noodles and spread, add another layer of noodles, and then spread again with spinach mixture, repeat this until all noodles/spinach mixture has been used, final layer should be noodles. Take sauce and pour over lasagna evenly spreading on the top to ensure that the noodles are covered and give dish a little shake/shimmy to ensure that sauce spreads over on the sides. Sprinkle the mozzarella and parmesan cheese over the top, cover with aluminum foil and bake for 25-30 minutes.

 **Check lasagna by placing a fork/toothpick in the center, if noodles are still a bit firm, cover and place back in oven for 5 minutes, do this for 5 minute intervals until noodles are at desired doneness.

Simple Cooking - Creamy Ranch Pork Chops and Rice


1 tablespoon vegetable oil
1 pound boneless pork chops, 3/4-inch thick (about 4 chops)
1 can (10 3/4 ounces) Campbell’s® Condensed Cream of Mushroom Soup or Campbell’s® Condensed 98% Fat Free Cream of Mushroom Soup
3/4 cup milk
1 envelope (1 ounce) ranch dressing mix
1 pinch paprika
2 1/4 cups water
1 cup uncooked long grain white rice


Heat the oil in a 10-inch skillet over medium-high heat. Add the pork and cook until browned on both sides. Stir the soup, milk and 1/2 package salad dressing mix in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the pork is cooked through. Sprinkle with the paprika. Heat the water and remaining salad dressing mix in a 3-quart saucepan over medium-high heat to a boil. Stir in the rice. Reduce the heat to low. Cover and cook for 20 minutes or until the liqiud is absorbed. Serve with the pork and soup mixture.

Simple Cooking - Pumpkin Mousse


1 cup skim milk
1 16 oz can of pumpkin
2 pkgs (small) sugar free instant vanilla pudding (don’t mix as directed. Use powder only)
1¼ teaspoon pumpkin pie spice
1 medium tub of cool whip light

Pour milk in bowl. Mix in pumpkin, pudding powder and spice. Wisk for 1 minute. Fold in cool whip and refrigerate for 4 hours. Sprinkle with cinnamon.

Simple Cooking - Cheesy Chicken Dorito Casserole


4 boneless skinless chicken breasts, boiled and shredded
1 med onion, chopped
2 tbsp butter/margarine
1 medium (16 oz) bag of Nacho Cheese Doritos
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Rotel
2 c extra sharp cheddar cheese (or your cheese of choice-- I always use more cheese because we like things EXTRA cheesy around here!)

Saute onion in butter and add both soups, rotel. Heat on low and then cool down. Put half of the crushed Doritos in the bottom of a 13 X 9 inch casserole dish. Add half layer Chicken and soups mixture with half layer of the cheese and then crushed Doritos. Repeat layers. Any extra Doritos can be added before the final layer of cheese is put on. Bake 350 degrees for 30 minutes.

Simple Cooking - Breakfast Casserole


Ingredients
1 can crescent rolls
1 roll of mild sausage
1/2 block of cream cheese
2 cups (1 bag) of shredded cheese

Directions
Cook sausage in skillet.
Mix cream cheese with sausage in bowl.
Spread one layer of crescent rolls in bottom of 8x8 pan.
Put a layer of cheese on top of the crescent rolls.
Add sausage/cream cheese mixture on top of cheese.
Sprinkle the rest of the cheese on top of the mixture.
Top with another layer of crescent rolls.

Bake at 350 for 30 minutes.

Restaurant Prayer Discount: Jordan Smith tells her story to John and Cleve




Jordan Smith is a record label rep with Capitol CMG. While she was in Winston-Salem, NC on business, she had breakfast at Mary's Gourmet Diner. Her waitress noticed the party praying over their meal and gave them a 15% discount on their bill, which is customary at this restaurant. Jordan was so impressed with the policy, she posted a photo of the receipt on Facebook and it went viral. Now, the Freedom From Religion Foundation is suing the restaurant to stop the prayer discount.

Simple Cooking - Easy Baked Ravioli


1-3/4 cups marinara sauce, warmed
Add 1/2 lb. ground beef, cooked and drained, to sauce
1 pkg. (9 oz.) refrigerated cheese ravioli, cooked
1 cup Shredded Low-Moisture Part-Skim Mozzarella Cheese
¼ cup Shredded Parmesan Cheese

HEAT oven to 375°F. LAYER 1/3 of the meat sauce and half the pasta in 1-qt. casserole. Repeat layers; top with remaining sauce. SPRINKLE with cheeses. BAKE 20 min. or until heated through.

Simple Cooking - Ice Cream Cake


1 pkg. oreos, crushed
1 stick melted butter
2 cups crunchy peanut butter
½ cup honey
2 quarts vanilla ice cream, slightly softened
2 packs Keebler fudge stick cookies

Must use a round springform pan. Stir the crushed oreos and melted butter together and press in bottom of the pan. Stand the fudge stick cookies around the edge of the pan and press down lightly into the oreo crust. Blend together the peanut butter, honey and slightly softened ice cream. Pour in the crust and freeze overnight.

Here's a healthier way to do chicken for your family...

1/4 cup Swanson® Chicken Broth or Swanson® Chicken Stock
3/4 cup finely crushed corn flakes
1/2 teaspoon garlic powder
1/8 teaspoon ground black pepper
1/8 teaspoon ground red pepper
1 1/4 pounds skinless, boneless chicken breast halves

Heat the oven to 400°F. Pour the broth into a shallow bowl. Stir the corn flakes, garlic powder, black pepper and red pepper on a plate. Dip the chicken into the broth. Coat with the corn flake mixture. Place the chicken onto a baking sheet. Bake for 20 minutes or until the chicken is cooked through.

1) Preheat oven according to crescent roll directions
2) Roll marshmallows in melted butter

Simple Cooking - Lemonade Pie


2 graham cracker pie crusts
1 large tub whipped topping
2 cans sweetened condensed milk
1 can frozen lemonade
Optional: 1 can of Reddi Wip

Thaw lemonade. Mix with sweetened condensed milk. Fold in whipped topping. Pour into pie crusts. Freeze for minimum of 4 hours. Optional: Top the pie with Reddi Wip when serving.

Bone Marrow Donor Match Needed for Local 5 Year Old Boy


Alex Moore is the 5 yr old son of Rev. Matthew Moore, pastor of Trinity Baptist Church in Martinez, GA. Alex was recently diagnosed with aplastic anemia, a rare disease that destroys the bone marrow. He needs a bone marrow transplant. Family members have been tested but did not match all the markers. The National Bone Marrow Registry will be sending a team to Martinez to conduct a bone marrow donor test drive in the Family Life Center of the church on Sat, July 12, from 11 am to 2 pm, and again on Sunday after the church service, from about 12 noon to 3 pm. The church is located at 4594 Columbia Rd, Martinez, GA - just past the Columbia and Belair Roads intersection. Alex's blood type is O+. Anyone between ages of 18 and 44 may be tested, including persons with other blood types whose test results will be placed on the National Bone Marrow Registry. Simple Cooking - Summer Sand Pudding


1 pkg Vanilla Wafers
3 or 4 Oreos
8 oz Cream Cheese
1/4 C Butter
2/3 C powdered sugar
2 small pkgs French Vanilla pudding mix
2 3/4 C Milk
12 oz Cool Whip

Crush Oreos and Vanilla Wafers in a food processor. In a separate bowl, cream together softened 8 oz cream cheese, butter, and powdered sugar. In another bowl, mix pudding with milk. Add to cream cheese mixture. Fold in cool whip. Layer into buckets with sand, pudding, sand etc.

Simple Cooking - Lemon-Lime Refrigerator Cake


Cake:
1 small package lime gelatin
1 package lemon supreme cake mix

Topping:
1 envelope of Dream Whip (2 to 2.5 cups yield)
1 small package lemon instant pudding
1.5 cups cold milk

Dissolve gelatin in 3/4 cup boiling water. Add 1/2 cup cold water; set aside. Mix and bake cake mix as directed in 13x9x2 pan. Cool cake 20-25 minutes. Poke holes in warm cake about 1 inch apart. Slowly pour gelatin mixture into holes. Refrigerate while mixing topping. In a chilled bowl, blend and whip topping mix, instant pudding and cold milk until stiff (3 to 8 minutes). Frost cake and refrigerate until served.

Simple Cooking - Chicken and Broccoli Bake


1 pound of boneless chicken strips
1 cup instant rice
1 can cream of chicken soup
2 cans water (using cream of chicken soup can)
1 cup fresh or frozen broccoli
3/4 cup shredded cheddar cheese
2 tablespoons butter
1 teaspoon salt
1 teaspoon pepper

Spray glass casserole dish with non-stick cooking spray. Pour in a cup of rice, a can of cream of chicken soup, two cans water. Add Chopped broccoli (about a cup) and cut large cubes of chicken boneless strips. Add shredded cheddar cheese (about 3/4 cup) and mix in dish with salt and pepper (teaspoon of each) . Add two tablespoons of butter. The mixture should be very soupy. Add more water if needed. Tightly foil and bake on 375 for about 45-50 minutes, until rice texture is good and chicken is done.

Simple Cooking - Pork Chop and Apple Bake


4-6 pork chops
Olive oil
1 can of apple pie filling
1 box of Stove Top stuffing (prepared according to package)

Heat skillet with small amount of olive oil. Add 4-6 pork chops, browning both sides. Place pork chops in 9 x 13 baking dish. Top with apple pie filling. Mix up a package of stove top stuffing (pork if you can find it or herbed). Cook according to the directions. Spread over apple filling. Bake at 350 for 30-45 minutes until golden brown and bubbly.

Simple Cooking - Special K Bars


1 cup light corn syrup
1 cup sugar
1 1/2 cups peanut butter
6 cups Special K cereal or Rice Krispies cereal
1 to 2 cups chocolate chips
1 to 2 cups butterscotch chips

Boil the corn syrup and sugar until it gets to a rolling boil. Turn off the heat and add peanut butter. Stir in cereal. Dump into a lightly greased 9x13 inch pan, pressing lightly with buttered fingers or wax paper. Melt together the chocolate chips and butterscotch chips in microwave until completely melted. Spread over bars and allow to cool.

Simple Cooking - Granny's Potato Salad


4 medium potatoes
Salt
1/2 stick butter, melted
3 heaping dinner tablespoons of mayonnaise
3 tablespoons Dill pickle relish
1/2 cup chopped onion
2 oz pimentos
Mustard

Peel and cube potatoes and place in boiling water until softened (NOT mushy--you will have mashed potato salad if you wait too long). While boiling, sprinkle a generous amount of salt in the pot. After draining potatoes and allowing to cool for a few minutes, pour butter over potatoes. Mix together with hands or large spoon. Add mayo, relish, onion and pimentos and mix well. Here comes the tricky part: the mustard. My original recipe calls for "5 continuous seconds squirting mustard," however my dad and I have found that it's best to just gradually add the mustard as you go. Add some, stir, taste and add more as needed. Remember: you can always add, but you can't take away. Chill in refrigerator or serve warm--however you like it!

Simple Cooking - Spinach Pie


3 boxes chopped spinach thawed
1 cup shredded potatoes (use hash browns to save time) or 1 cup cooked rice
1 bar cream cheese:
3 eggs beaten
1/4 cup parmesan cheese
3 large onions or leeks sauteed
Bread crumbs
Butter
Mozzarella cheese (optional)

Mix all ingredients together and pour into glass 9x12 inch pan that has been greased with butter then spread with a heavy dusting of bread crumbs. Spread mixture out evenly coat with a layer of bread crumbs and mozzarella cheese (optional). Then beat and egg and brush across top to make a toasted crust. Bake at 350 for 30-45 minutes until brown.

Simple Cooking - Poor Man's Lasagna


1 lb ground chuck
1 box of elbow macaroni noodles
1 container of cottage cheese
1 jar of spaghetti sauce
1 8 oz bag of mozzarella cheese

Brown 1 lb ground chuck and drain while cooking elbow macaroni noodles. Drain noodles. Mix together noodles hamburger large container cottage cheese and spaghetti sauce in 9x13 casserole dish. Cover with mozzarella and bake at 350 until warm and cheese has melted. It's better after the first day!

Simple Cooking - Easy Pizza Bubble Bread


1 Can of Canned Biscuits
1 C pizza sauce
2 C shredded cheese (Pizza cheese or your favorite)
Toppings as desired (pepperoni, onions, black olives etc)

Preheat oven to 375 degrees. Cut each biscuit in to 4 pieces with scissors. Place in bowl. Add sauce, 1/2 C of shredded cheese and toppings. Mix together making sure each biscuit piece is coated. Place in 9x9 dish that is well greased. Cook 20 mins. (if you use the GRANDS, cook longer). Put the remaining cheese on top and return to oven for 5 minutes. Serve warm.

Simple Cooking - Angie's Peanut Butter and Banana French Toast


3 Eggs
3 dashes of vanilla extract
1/4 cup and 2 tablespoons of creamy peanut butter
6 slices of bread
3 small bananas, sliced in round pieces
1/4 cup and 2 tablespoons butter

1. In a small bowl, beat together the eggs and vanilla.
2. Spread 1 tablespoon of peanut butter on a slice of bread, then place banana slices on top of a slice of bread. Make a peanut butter and banana sandwich.
3. On a skillet or in a frying pan, melt butter over medium heat. Dip the sandwich into the egg mixture and place in the heated pan or skillet. Cook until brown on both sides. Serve hot. You can serve with honey, syrup or sprinkle powered sugar on the top for some added sweetness.

Cleve's Sure-Fire Floor Mopping Technique



THE proper way to mop a linoleum floor!
For really important jobs... ditch the sponge mops and grab a traditonal mop. Use ONLY very hot water. (Proper temperature is reached when you cannot hold your bare hand in the water longer than 4 seconds.) Also, make sure you have maximum illumination... especially for darker floors. (One way to do this is to tape a flashlight onto your mop)  

1) First treat the tough spots with your favorite cleaning solvent... allow it a few minutes to set. (Be careful not let it completely dry onthe floor)  
2) In small spaces and for especially grimy spots using abreviated short strokes applying maximum pressure (also know as "elbow grease")...  
3) For larger areas use broad sweeping motions... with a wide side to side motion. Like a sailor swabbing the deck...  
4) For quicker drying, you can use a boxed fanset on high speed- or something I like to do... is take my shoes off and step on a very thick towel then- using your feet slide it across the floor.

Simple Cooking - Quick Birthday Ice Cream Cake


24 ice cream sandwiches
2 containers of 8 oz. whipped topping
1 jar hot fudge ice cream topping
1 jar of caramel ice cream topping
Nuts (optional)
Sprinkles (makes it fun)

Arrange a layer of ice cream sandwiches in the bottom of a 9x13 dish.
Drizzle both ice cream toppings.
Add a layer of whipped topping.
Repeat the first three steps.
Sprinkle choice of decorative topping: nuts, sprinkles, candy pieces, etc.
Cover and freeze for at least 30 minutes until it sets.

Simple Cooking - Deb's Breakfast Pockets


1 - 8 oz block cream cheese
1 pound regular Jimmy Dean sausage
2 teaspoons mustard
2 - Pillsbury (or store brand) 8 count crescent rolls
1 egg beaten with 1-11/2 T water
Poppy seeds

Leave cream cheese out to soften. Brown the sausage - drain off any liquid. Combine hot browned sausage, cream cheese and mustard and stir until well mixed. Roll out crescent rolls and cut each crescent roll diagonally in half. Place 1 tablespoon sausage mixture in center and bring dough around sausage. Place on parchment lined cookie sheet. Brush with egg. Sprinkle with poppy seeds. Cook according to directions on the crescent roll package.

Simple Cooking - Poppy Seed Chicken Casserole


3 chicken breasts boiled and shredded
2 cans cream of chicken
8 oz sour cream
Salt, pepper, garlic powder, poppy seeds to taste

Mix all ingredients in 9x13 pan. Top with two sleeves crushed Ritz crackers that have been mixed with a stick of melted butter and a little more poppy seeds. Bake at 350 for 30 min.

Simple Cooking - Weight Watcher Easy Peach Cobbler


2 lb. frozen peaches
1 box yellow cake mix
1 can(s) Diet 7Up or Sprite

Spread frozen peaches in Pam sprayed 13x9 pan. Sprinkle dry cake mix over peaches. (try sugar free Pillsbury for less) Pour 7up over cake mix. Cover with foil and bake for 20 minutes at 350 degrees. Uncover and bake for 40 minutes.

Simple Cooking - Lima Bean Casserole


1 Package of Frozen Lima Beans
1 (14.5oz ) Can Of Hunts Diced Tomatoes Drained
1/2 tsp Of Salt
1 Cup Of Butter
1 Pack Of Cracker Crumbs (Saltine, Ritz or Club)
1 Medium Onion, Chopped
1/2 Cup Of Green Pepper Chopped
1/2 Cup Of Cheddar Cheese, Grated

Prepare Beans According To The Package. Drain Well. In A Saucepan Combine Tomatoes And Cracker Crumbs, Heat For 2 Minutes. Add Beans, Butter, Onion Pepper And Cheese Mix Well. Pour Mixture Into A 8x8 Casserole Pan. Add 1 Cup Of Cheese And 1 Package Of Cracker Crumbs On The Top Of The Casserole Bake At 300 For 30 Minutes.

Simple Cooking - Buffalo Chicken Dip


We're revisiting one from a couple of years ago...perfect for a Super Bowl party...

4 blocks of cream cheese
Two 12.5 oz cans of chicken
6 oz of shredded mozzerella cheese
6 oz of ranch dressing
4 oz (or more, depending upon your desired heat factor) of Franks Red Hot Sauce

Preheat oven to 375. Open all 4 blocks or cream cheese and soften in the microwave. Once softened, add all the other ingredients, mix well. Put the mixture in a casserole dish. Place dish in oven and bake for 20-25 minutes.

Simple Cooking - Chicken Tortilla Soup


1-2 lbs cooked chicken (rotisserie from the deli works)
6 cup chicken broth (canned or homemade)
1 can diced tomatoes (with chilis if you want spicy)
1 can bean, drained (black/navy/pinto, any will work)
1 can corn, not drained
1 tablespoon each chili powder, garlic, cumin
1 tsp oregano
1 tsp onion powder
Salt and pepper to taste
Red pepper flakes of you want spicy
2-4 tablespoons fresh cilantro chopped
Tortilla chips crushed
Cheese and sour cream for garnish

Bring broth to boil. Add shredded chicken. Reduce heat to simmer. Add everything else except chips/cheese/sour cream. Simmer 20-30 minutes. Serve with crushed chips, cheese and sour cream.

Simple Cooking - Taco Soup


1 can diced tomatoes
1 can rotel
1 can dark kidney beans
1 can light kidney beans
1 can pinto beans
1 can corn
1 envelope taco seasoning
1 envelope ranch dressing powder
1 pound ground beef (cooked)

Combine all ingredients and cook either on stovetop or in crockpot.

Simple Cooking - Potato Soup


6 green onions, thinly sliced with white and green parts separated
4 cups chicken or vegetable broth
2 lbs. frozen hash browns or fresh Russett potatoes, cubed or shredded
2 Tbsp. Old Bay seasoning (or any Cajun seasoning)
1 cup shredded sharp cheddar, plus extra for serving
1 can fat-free condensed milk
1 jar of bacon bits

In a large stockpot, stir together the white parts of the sliced green onions (not the green hollow parts), broth, hash browns and seasoning. Heat over medium-high heat until the soup reaches a low boil, stirring occasionally. Reduce heat to medium-low, cover, and simmer for 10 minutes, stirring occasionally. Once the potatoes are cooked and soft, use an immersion blender to puree most of the soup until it is nice and thick. (Or you can transfer the soup to a traditional blender, and puree it there until smooth.) Return soup to stockpot, and stir in cheddar until combined. Serve warm, garnished with extra cheddar and the green parts of the green onions.
