Simple Cooking - Smores Bars


1 ½ cups teddy bear shaped graham cracker cookies
1 ½ cups miniature marshmallows
1 ½ cups semi sweet chocolate chips
½ cup brown sugar
½ cup butter

Preheat oven to 350º F. Prepare a 9” square baking dish with non-stick cooking spray. Pour ingredients into the prepared baking dish and press firmly. Bake for 15 minutes. Remove from oven and cool completely. Cut into bars.

Simple Cooking - Caramel Apple Dip


Mix 1 block softened cream cheese, 1/2 cup sugar, 1/2 cup brown sugar, 1/2 a bag of Heath toffee bits and 1 tsp vanilla. Slice green and red apples (green is better with this but I put in a little red to make it more "Christmassy") and dip in cream cheese mixture.

Simple Cooking - Crescent-Wrapped Brie


1 (8 oz.) Can Pillsbury Crescent Rolls
1 (8 oz.) Round Brie
Hot Sauce
1 egg (beaten)

Heat oven to 350. Unroll and spread crescent roll dough onto baking sheet. Place cheese on center of dough. and press holes in Brie using end of wooden spoon or something similar. Add a few drops of hot sauce in each hole. Gently fold dough evenly on top and around Brie, pressing to seal. Brush with beaten egg. Bake at 20 – 25 minutes or until golden brown. Serve warm with crackers or chips.

Simple Cooking - Lemonade Pie


1 graham cracker pie shell
1 small or 1/2 of a lg frozen lemonade mix
1 bowl cool whip
1 can condensed milk (reg or fat free)

Simple Cooking - Chili Cornbread Bake


Left over chili or store bought chili
2 boxes of Jiffy Corn Muffin Mix
Milk and eggs
1 bag of shredded cheese (of your choice. I like either Sharp or Mexican blend)

Preheat oven 350 degrees. Mix corn muffin mix as directed on the box. Grease a casserole dish 9 x 13 with Pam. Spread the cornbread mix in the bottom of the dish. Then add the chili on top of the UNCOOKED cornbread mix. Place in 350 degree oven for 30-35 minutes or until center is set and edges of cornbread are golden brown. Take out of oven and add cheese. Put back in the oven for 5 minutes. Serve with Sour Cream!

Simple Cooking - Quick and Easy Cheesecake


2 cans Pillsbury butter crescent rolls
2 (8oz) packages cream cheese (softened)
1 cup sugar
1 teaspoon vanilla
1/4 cup butter (melted) Cinnamon & sugar (I used about 1/4 cup sugar and 1 tbs cinnamon)

Unroll and spread 1 can crescent rolls on bottom of un-greased pan. Combine softened cream cheese, sugar, and vanilla. Spread mixture over crescent rolls. Unroll and spread remaining crescent rolls over mixture. Spread melted butter over the top and sprinkle with cinnamon and sugar. Bake at 350 degrees for 20-30 minutes.

Simple Cooking - Shepherd's Pie


1 pound of ground beef
1 package of French Onion Soup
1 can whole kernel corn
1 tub of Country Crock Mashed Potatoes (or make your own)

In a 9x13 casserole dish, layer ground beef cooked with French onion soup and drained. 2nd layer is drained, buttered whole kernel corn. 3rd layer Country Crock (or homemade) mashed potatoes. Sprinkle any shredded cheese on top. Put in oven 325 degrees 20 minutes, until warm and cheese is melted.

Simple Cooking - Triple Delicious


1 pack brownie mix for 9x13 pan (along with ingredients listed on package)

1 pack Oreos

Grease 9x13 pan. Prepare cookie mix according to package directions and pour in pan. Lay Oreos on top and gently press them partly into cookie mix. Prepare brownie mix according to package directions and pour over top. Bake at 350 for 30 minutes or till the middle is done.

Simple Cooking - Chicken Pot What?


1 store-bought cooked rotisserie chicken
2 cans of cream of mushroom soup
2 cans of cream of chicken soup
1 bag of frozen mixed vegetables
1 bag of frozen Pilsbury Grands Biscuits

Thaw fourteen of the frozen biscuits. Shred or cube the chicken. In a bowl, combine chicken with the soups and frozen vegetables. Pour mixture into a casserole dish. Roll biscuits flat into one piece and put on top of mixture in casserole dish. Bake at 350 for 35-40 minutes.

Veterans Job Readiness Event


Following its commitment to help veterans find their place in the workforce, the Georgia Department of Labor (GDOL) will host a Job Readiness Kickoff on Friday, Sept. 20, in Augusta. Job-Readiness workshops will be held from 12 noon until 3 p.m. at the Augusta First Baptist Church, located at 3500 Walton Way. The workshops will help the returning veterans in networking, interviewing, translating their military skill-sets to the civilian workforce, and how to successfully navigate a career expo. The Job Readiness Kickoff has been specifically designed to coincide with the October 17 Paychecks for Patriots event being held at Fort Gordon.

Simple Cooking - No Peek Beef Tips


2 lbs. Stew Meat or Beef Steak Tips
1 10 ¾ oz. can Cream of Chicken Soup
1 envelope of french onion soup mix
1 envelope brown gravy mix
1 cup water
1 small chopped onion (Optional)

 Place stew meat in bottom of crock pot. Place chopped onion on top. In a bowl, mix well the: cream of chicken soup, french onion soup mix, brown gravy mix, and 1 cup of water. Set on low for 8 hours serve with pole beans/any type of vegetable, over rice/mashed potatoes/pasta and enjoy!! **Optional ingredients to add into the crock pot would be carrots, celery, and potatoes**

Tailgate Loaded "Tot-chos"


1 32 oz. package of frozen tater tots
2 cups sour cream
3 tablespoons ranch seasoning mix
2 tablespoons fresh chives, divided
1 cup shredded cheddar cheese
1/4 cup cooked bacon crumbles

Bake tater tots according to package instructions. In a medium bowl, combine sour cream, seasoning mix and chives. Cook bacon according to package instructions. Arrange tater tots on serving platter. Spoon sour cream mixture on top and sprinkle with cheese, bacon and remaining chives.

Simple Cooking - Peach Salad


2 small packages of Peach Jello
1 large can of crushed pineapple
1 regular size tub of Cool Whip
2 cups of buttermilk

Heat Jello and pineapple in saucepan (about 5 minutes). Cool it. Add cool whip and buttermilk. Refrigerate several hours or overnight.

Simple Cooking - Italian Chicken, New Potatoes and Green Bean Bake


3-4 raw chicken breasts
New potatoes
Green beans (fresh or canned)
1 package of Italian dressing mix
1 stick of butter

Directions: 1. Place chicken breasts, new potatoes, green beans in a 9×13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. 2. Cover with foil and bake at 350 degrees for 1 hour.

8 oz container of Cool Whip
8 oz of any flavor yogurt
1 graham cracker pie crust

1 10oz. Can Cream of Chicken Soup
1-2 cans shredded chicken
1 Cup Bisquick
1/2 Cup Milk
1 Egg

Preheat oven to 400F. Mix Veg All, cream of chicken soup, and shredded chicken in casserole dish. In a separate bowl, mix together Bisquick, milk, and egg. Pour Bisquick mixture over chicken and vegetable mixture. Bake in the oven for 30 minutes or until top is a nice brown.

Brown sugar
One 10 oz can cream of mushroom soup
2 oz soy sauce
One crock pot

Simple Cooking - Easy Fruit Dessert


1 can cherry pie filling (or your favorite flavor)
1 can crushed pineapple in HEAVY syrup
1 box yellow cake mix – NOT PUDDING
2 sticks Margarine melted
½ cup sugar

Mix pie filling and pineapple with ½ cup sugar and put in 9 x 12 dish. Crumble entire box of cake mix on top. Pour melted butter over cake mix.

Cook 350 degrees for 1 hour (it will be browning and bubbling)

Simple Cooking - Cheesy Ham and Hash Brown Casserole


30 oz. bag frozen, shredded hash brown potatoes
8 oz. sour cream
1 can cream of chicken soup
1/2 cup butter, melted
1 small onion, diced fine
16 oz. package of ham (cubed)
2 cups shredded cheddar cheese (1 cup to mix in and the other 1 cup to put on top)

Stir all ingredients together in a large bowl. Place into a lightly greased 9x13 pan. Sprinkle top with 1 cup cheese. Bake at 350 degrees for 45-60 minutes. Let cool a bit and serve. Great for breakfast or dinner!

Simple Cooking - Orange BBQ Chicken


1 lb boneless, skinless chicken breast
1 bottle of favorite BBQ sauce
1/3 cup orange juice
1 tablespoon flour
1 large Reynolds oven bag

Place flour in bag and shake gently to coat sides. Pour BBQ and OJ in bag and squeeze until mixed. Place chicken in oven bag, seal with plastic tie, and set in 9x13 pan-making sure to arrange chicken in single layer. Cut 6 slits in top of bag and cook for 30-35 minutes. Cut bag open and pour into desired serving dish. The chicken comes out so moist and is great over rice!

Simple Cooking - Crockpot Salsa Chicken


3-4 boneless skinless chicken breasts
1 can cream of chicken soup (can use regular or the Healthy Request)
1 cup salsa
1 package taco seasoning
1 cup sour cream

Shredded cheddar cheese (optional).  Combine cream of chicken soup, salsa, and taco seasoning in crockpot. Add chicken breasts. Cover and cook on low for 6 hours. Shred apart chicken. Stir in sour cream. Serve over rice or make chicken soft tacos (our favorite!) Add the shredded cheese on top!

Simple Cooking - Parmesan Crusted Tilapia


3/4 cup freshly grated Parmesan cheese
2 teaspoons paprika
1 tablespoon chopped flat-leaf parsley
4 tilapia fillets (about 1 pound total)
1 lemon, cut into wedges
Olive oil

Preheat the oven to 400 degrees. In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper. Drizzle the fish with olive oil and dredge in the cheese mixture. Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10 to 12 minutes. Serve the fish with the lemon wedges.

Simple Cooking - Cheeseburger Pie


1lb lean ground beef or ground turkey
1 large onion, chopped (or you can use onion powder)
1/2 tsp. salt
1 cup shredded cheddar cheese or low fat shredded cheddar cheese
1/2 cup Bisquick
1 cup milk or skim milk
2 eggs or egg beaters
Sour cream (optional)

Preheat oven to 400 degrees. Brown ground beef/turkey and onion together until meat is cooked. Mix in salt. Add a little sour cream if desired. Spread in bottom of glass baking pan. Sprinkle cheese on top. In a separate bowl, mix together Bisquick, milk and eggs (mixture is supposed to be runny). Pour mixture over meat and cheese. Bake at 400 degrees in oven for 25 minutes or until a knife inserted comes out clean. Makes 6 servings.

Simple Cooking - Chicken-Stuffed Crescent Rolls


1 pack of boneless skinless chicken breast (3-4)
1 pkg. cream cheese
Salt
Pepper
Garlic powder
Frozen spinach
2 Cans crescent rolls

Pan sear or boil chicken, then chop into bite size pieces. Combine 8 oz cream cheese, spinach to liking (for us about half a bag), salt/pepper/ and garlic powder to taste, and mix until well blended. Add the cut up chicken and mix. Finally spoon mixture into crescent rolls and roll up. Bake as directed on crescent roll packaging.

Simple Cooking - Chicken and Rice Casserole


3 boneless, skinless chicken breasts
1 large can of cream of chicken soup
1 small container of sour cream
2 cups instant rice
1 roll of Ritz Crackers
1/2 stick melted butter
Salt and pepper

Boil the chicken and save the broth. In a 10x13 dish, add cream of chicken soup, sour cream and rice. Add the chicken (chopped) and 1 cup of the chicken broth, along with salt and pepper. Crumble the crackers and pour on top of the dish. Drizzle the melted butter on top of the crackers. Bake at 350 for 20 minutes or until the crackers are golden brown and crispy.

Simple Cooking - Cheesy Potato Beef Bake


1 lb ground beef
2 cans(4 oz) mushroom stems and pieces
2 pkgs (5.25 ozs) Augratin Potatoes
4 cups boiling water
1 1/3 cup milk
2 tsp butter
1 tsp salt
1/2 tsp pepper
1/2 seasoned salt
1 cup shredded cheese

In a skillet over medium heat, cook beef until no longer pink, drain. Place in greased 13x9 baking pan. Top with mushrooms. Combine potatoes and contents of sauce mix packet, water, milk, butter, salt, seasoned salt & pepper. Pour over beef and mushrooms. Cover and bake at 400 for 30 minutes or until heated through. Sprinkle with cheese. Bake uncovered for 5 minutes or until cheese is melted. Let stand 10 minutes before serving.

Simple Cooking - Delicious Garlic Baked Shrimp


1 lb. raw shrimp, deveined, peeled and tails removed
2 tbsp. light butter
Melted Juice from ½ a lemon (or about 2 tbsp. of lemon juice)
2 tbsp. finely chopped parsley
2 tbsp. grated Parmesan cheese
1 tsp. paprika
½ tbsp. lemon zest
4 cloves of garlic, minced (or about 2 tsp. prepared minced garlic)
1 cup corn flakes cereal, crushed
Salt and pepper to taste

1. Preheat oven to 425 degrees. 2. In a medium sized bowl, combine shrimp, lemon juice, garlic, paprika and salt and pepper. Pour into an 8x8 baking dish. 3. In another bowl, combine cornflakes, butter, Parmesan cheese, lemon zest and parsley- just enough to evenly blend the ingredients. 4. Sprinkle the cornflakes mixture over the shrimp. Bake about 10-12 minutes, until the shrimp are pink and cooked through. Makes 4 servings; serving size is about 1 cup.

Each serving is 180 calories; 5g fat; 7g carbohydrates; 24g protein. 4 weight watchers points +.

Simple Cooking - Chicken Divine


2-3 boneless chicken breasts
1  bag of frozen broccoli florets
1 container sour cream (16 oz)
2 small cans of cream of mushroom soup
1 sleeve of Ritz Crackers (crumbled up)
1/2 cup butter
2 bags (8 oz each) of shredded cheese
Salt and pepper to taste
1 tablespoon Nature's Own Seasoning

Cut up and brown chicken with Pam cooking spray and season chicken with natures own seasoning and a dash if salt (if desired) and pepper. While chicken is cooking boil broccoli until tender. When chicken and broccoli are done drain broccoli and add chicken and broccoli on a baking dish. Next mix together soup and sour cream in a mixing bowl and then add to the chicken and broccoli. Mix together and then blend in one bag of cheese. Next add another 8 oz bag of cheese on top of the casserole and then add the sleeve of crumbled crackers on top of the cheese. Finally melt the butter and evenly put the butter on top of the crackers. Bake at 350° for 20-30 minutes or until crackers are brown on top.

Simple Cooking - Pasta Salad


1 box multi-colored pasta (16 oz) - cooked and drained, do not rinse

Add to it:
6-7 pieces of mozzarella string cheese (sliced)
Cherry tomatoes
Pepperoni
1 can of black olives
Banana peppers
Cooked chicken - shredded or chunks
Zesty Italian dressing - Joanne likes to buy hers at Olive Garden

Mix the ingredients and add the Italian dressing. Add salt and pepper to taste.

Simple Cooking - Lowfat BBQ Chicken Crescents


1 can (8 oz) Pillsbury® refrigerated reduced fat crescent dinner rolls
1 cup shredded cooked chicken
1/4 cup barbecue sauce
1/3 cup reduced fat shredded cheddar cheese
1 egg, beaten

Separate dough into 8 triangles. In bowl, mix chicken and barbecue sauce. Spoon chicken mixture onto short end of each triangle; sprinkle each with 1 teaspoon of the cheese. Roll up loosely as directed on can. Place on ungreased cookie sheet. Brush with egg; sprinkle with remaining cheese. Bake at 375°F for 12 to 15 minutes.

Simple Cooking - Chicken Buffalo Dip (Healthy Version)



2 cans (9.75 oz or 10 oz) of 98% fat free white chunk chicken in water, drained (I rinse mine)
1 package (8 oz) fat free cream cheese, soften
1/2 cup Frank's Red hot sauce
1/2 cup shredded part skim mozzarella cheese
1/4 cup fat free ranch dressing
1/4 cup fat free Greek yogurt

Directions: Preheat oven to 350. Place cream cheese in medium bowl and stir still smooth. Mix in hot sauce, cheese, ranch, and yogurt. Stir in chicken until thoroughly combined. Spoon mixture evenly into deep 8x8 baking dish. Bake for 20 minutes. Serve with baked tortilla chips, carrots, or bell peppers. You may also place in microwave for 5 minutes.

Makes 15 servings of 1/4 cup each.

Simple Cooking - Key Lime Mousse


Blend 3 avacados, 1/2 cup key lime juice, dash of kosher salt, 3 bananas, 1/2 cup agave nectar, 2 tablespoons of lime zest into a food processor. While it's blending peel and slice 3 kiwi. Serve in individual bowls or one large bowl. Arrange kiwi slices on top in a pattern and garnish with a few whole raspberries. Serves 6. You can let it sit in the refrigerator for a few hours for optimal flavoring before eating.
