Simple Cooking - Crockpot Mexican Chicken

• 1 pkg. boneless, skinless chicken breasts
• 1 packet taco seasoning
• 1 jar salsa
• 1 can black beans
• 1 can corn, drained
• 1 (8oz.) pkg cream cheese OR 1 cup sour cream

1. Put chicken breasts on bottom of crockpot and sprinkle with taco
seasoning. Add salsa, corn and beans.

2. Cook on high for about 4-5 hours (low 6-7 hours) or until chicken
is cooked.

3. Add 1 package cream cheese (just throw it on top!) and let cook
another 1/2 hour until cheese is melted (or mix in sour cream).

4. Stir and enjoy! The chicken should be so tender that it can be
easily shredded with a fork. Sometimes I serve this as a casserole
with Spanish or brown rice, OR use it as a filling for burritos and
serve it with tortillas and shredded cheese and lettuce. It's also
delicious on top of salad and topped with guacamole, so as you can see it is very versatile!
